The long moulder can be used to make bread rolls of different sizes. The long moulder contains several rollers to shape the dough as good as possible. Each set of rollers is equipped with air suspension. In addition, each roller of the long moulder is dough repellent, meaning there is little to no dough loss.
Before the dough ball reaches the rollers, it is stabilized and aligned with the long moulder. The dough ball is then made into a thin slice with the help of the first and second set of rollers. After this, the dough changes running direction. At the third set of rollers, the dough is rolled out again. This creates a thin and wide slice of dough. This slice of dough is rolled up by the rotating rolling mat. The rolled-up dough is stabilized by the pressure board.

The Easy Control System can be used to set the height of the rollers per recipe. From the moment these settings are saved, you can easily select the recipe to implement these settings. The settings per recipe can be easily changed. If the ECS is linked to the Dough Process Computer, the long moulder automatically knows the number of bread rolls that need to be made per recipe via the batch lists entered in the DPC.

The long moulder can be used safely for food processing. The rollers, pressure board and conveyor belts are made of plastic that meets the EU and US standards for food-safe processing of products. In addition, the frame of the long moulder is made of the food-safe material stainless steel. Stainless steel is a material that is long lasting and easy to clean. The pressure board can be easily removed and cleaned.
